CSN Giveaway

I love free things (does this surprise you at all? No, of course it doesn't). But isn't there always a dilemma when it's free things around the holiday?

Because then you think "should I spend this on myself or should I use it to get a gift for someone else?" Or, heck, with $75 of CSN credit, you could buy several Christmas gifts. Or, you know, several things for yourself.

Anyway, you can work out that problem on your own. For now, leave a comment (one per person, please) to be entered to win a $75 gift certificate to any CSN's 200+ stores.

And because I clearly am in all food-all the time mode, but can't afford to even think about any more dessert recipes, why don't you share a link for a main dish recipe?

I'll pick a winner from the comments on Saturday, Nov 13th and notify them (so please make sure there is a way to get a hold of you from your comment). Also, unfortunately, because of shipping issues, this is only open to US and Canadian residents.

Um, I pretty much don't cook currently... One of these days I'll get back on the bandwagon. But I pulled this out of my freezer last night and it was tasty with mashed potatoes. Naturally, I used mozzarella instead of swiss, because swiss cheese and I don't get along. Also, I made 2 8x8s instead of a 9x13, hence the one in my freezer.

I know that you and I both browse Britt's cooking blog, so I won't refer to any of her amazing recipes. I've been a sucker for butternut squash soup this season (which reminds me to use the two beauties sitting in my vegetable basket right now.)

Okay, I'm lame. I can't find the recipe I want to tell you about, but it's Rachel Ray's broccoli and lemon fritatta. It's delicious and takes about ten minutes to put together and ten (okay fifteen) minutes to bake!

This chicken curry recipe is amazing and has been quite the crowd pleaser on several occasions.

Brown ½ onion-ish with oil and throw in chopped up chicken (2 chicken breasts- ish)
Throw in some curry powder.

Once that is cooked, add 3 medium-sized potatoes chopped, and 2 cans coconut milk, 4 golden curry blocks (golden curry) and soon after, add 4-5 peeled and chopped carrots. Let simmer/boil, covered. Add more curry powder as needed. Add salt and pepper. Once veggies are pretty soft, add 1-1 ½ green peppers (chopped). Let cook until green pepper is slightly soft. Serve over rice. (If becomes too thick, add some milk or water)

This is one of the yummiest meals I have made recently. It's a salad so that means it's healthy- right? We didn't really like the dressing that went with it- very mayonnaisy, so we just used Ranch Dressing. Since you now know how to make Ranch from scratch, you must have a plethora of it hanging around your house, so you should be okay ;)

We made this braised beef stew the other night. The meat can be kind of pricey, but if you make the full recipe, it's at least 4 dinners for our little family of three. We've got some in the freezer as we speak. Mmmm.

Oh, we also didn't use beer. We used malta--it's a yeasty drink from the ethnic section of our grocery store. Nasty, NASTY to drink, but in this recipe, I think it added a better taste than just substituting the beef broth would.

I'm a huge fan of Food Network's 5 Ingredient Fix show--I have a special hatred for recipes that require 1/2 tsp. of random ingredients that I don't already have. I tried this one earier this week (except I substituted frozen breaded shrimp for the catfish bit and I made my own "cooked" aioli for the Remoulade Sauce as opposed to buying an aioli sauce in th store which I couldn't find) and loved it:
